If you usually wake up hungry, eat little breakfast and feel hungry again by mid-morning, you may be interested in making a slightly more complete breakfast that will satisfy you and give you energy for the whole morning.

Having a good breakfast doesn’t have to mean getting up an hour earlier, and sometimes not even planning. I also have times when I don’t even have time to eat breakfast, so I make up things as I go. I take a fruit, a handful of nuts, or the leftovers from the day before, a few slices of bread … Something that I like, it fills me up and is easy and fast.

Today I tell you some of my breakfast ideas for those busy days.

1. Breakfasts with seasonal fruits

A banana, tangerines, apple, pear, medlars … fruits and vegetables that are in season. Choose fruits that are easy to peel if you want to save time, or whose skins are edible (like apples and pears).

One or two pieces of fruit is quite filling. Juices and smoothies, not so much. So better take whole pieces, which does not take anything and does not require effort or know how to cook.

If that’s not enough, eat a handful of nuts as well. Walnuts, almonds, pumpkin seeds, cashews, pistachios … whatever you have and like. You can also take them to eat on the way or at work.

2. Toast to start the day

It’s the easiest after fruit. Nail clipperSlices of bread from the day before on the diagonal to make them larger and toast them in the toaster or in the skillet over medium heat. If you have whole wheat bread, it works too.

For toasts you can buy large loaves, cut them into slices and freeze them, so you will always have some available. You just have to take them out and put them directly in the toaster or in the pan. It is not necessary to let them thaw, they will do so with the heat when cooking them.

If toast alone is not enough, dress it up with something. A splash of olive oil and a pinch of salt are enough, especially if it is an oil that you like, with a lot of aroma.

If you have a loose tomato lying around you can grate it and spread it on toast. I know it’s tempting to use canned crushed tomato, but it won’t taste as good to you. Be careful, if you like it, no problem!

You can put more things on your toast. Hummus, guacamole, avocado slices, peanut butter, sliced ​​banana, chocolate… use whatever you have at home and feel like it.

3. Oatmeal, muesli and company

If you prefer a spoonful breakfast, oatmeal and muesli are very good options. You have both in any supermarket, also without added sugar, which is the most recommended.

Instead of putting the vegetable drink in a glass, put it in a bowl. Add cocoa, coffee or whatever you want (or nothing, the drink as is) and a good handful of oatmeal or muesli. If you like it soft and warm, microwave for 1 minute or 3 minutes over medium-low heat in a saucepan.

These breakfasts are filling, but you can add more ingredients to make them tastier and more nutrient-dense. For example, a handful of nuts, some fruits cut into small cubes (or as such if they are small, such as raspberries, blackberries, currants and blueberries). For more flavor add cinnamon, vanilla, grated dark chocolate, grated coconut, etc.

4. Ideas for your snacks

If we feel like having a sandwich for breakfast, we can do it quickly too. After all, it’s like toast but with a slightly different filling. You can add whatever you want to a sandwich, both salty and sweet.

Among the sweets we have ingredients that look great with toasted bread: peanut butter, dark chocolate, banana, strawberries, coconut cream, grilled pineapple, mango, apple …

Try making a peanut butter sandwich with sliced ​​banana or diced strawberries. On top you can put chopped nuts, coconut cream or grated chocolate. Close it with the other bread and toast it all together.

The sandwiches savory are the most common and certainly have a lot of things you can use. Sack salads, lamb’s lettuce, arugula, tofu (smoked tofu is even better), sliced ​​seitan, hummus, guacamole, sliced ​​fresh tomato, grated carrot, canned white asparagus, bean sprouts, alfalfa or radish sprouts, salad (if you have leftover from the previous day), avocado, peanut butter (both are valid for both sweet and salty) …

If you want it to have a mixture of crunchy and creamy textures, toast the bread once the sandwich is assembled and use some cream for the filling, for example avocado mashed with a fork or a chickpea or bean hummus.

If the problem is time and you can’t help but assemble the sandwich and eat or take away, put a little of everything you have in the fridge and make yourself a sandwich of 2 or 3 floors, with lettuce, creams or vegetable patés and if you can , a few slices of tofu, seitan or tempeh.

Leftovers from other dishes can also be delicious between breads, you just have to take care that they are not very dry things (you are not going to make a sandwich only with cooked rice) or very large pieces.

The leftover curries and stews can be crushed with the fork, especially if they have potato to make a supersabroso original filler (eg potato and sweet curri).
