Cucumber Mousse With Melon And Radishes

The best time for cucumbers is summer. It carries the bad reputation of being little more than water but that is something that goes very well when the heat is on.

The scientific name of the cucumber plant is Cucumis Sativus and it belongs to the botanical family of cucurbits, with large fruits protected by a firm rind, such as melons, watermelons, zucchini and squash.

The super hydrating power of cucumber

When the heat is hot, especially during the summer months, the body needs to quickly replenish fluids through foods such as cucumber, which is 95% water.

This ratio makes it a food with powerful diuretic and laxative properties, ideal for a day of exercise outdoors and also for weight loss diets, as it is satiating and very low in calories, due to its reduced carbohydrate content ( 2.2%) compared to other vegetables.

In summer it is advisable to increase the intake of fresh fruits and vegetables due to their abundance in water. You also need to drink more, but foods like cucumber are important for hydration because they providemineral salts and water that we could call “slow absorption”, as it favors the digestive transit and does not pass into the blood as quickly as the drunk liquid.

Ingredients for 4 people

  • 2 medium cucumbers
  • 250 g Galia melon
  • 1 apple
  • 200 ml of Greek type yogurt or whole vegan
  • 1 level tablespoon agar-agar flakes
  • The juice of a lemon
  • 1 branch of fresh dill
  • 2 radishes
  • Freshly ground white pepper and salt

Preparation (10 minutes + 2 minutes of cooking)

  1. The cucumbers, melon, apple are chopped and crushed together with lemon juice and dill.
  2. A third part of the previous mixture is poured into a saucepan, the agar-agar is added and it is put on the fire.
  3. Let it heat while stirring until it boils.
  4. It is removed from the heat, allowed to cool slightly and mixed with the rest of the previous mixture.
  5. Add the vegan yogurt, salt and pepper to taste and put in the fridge.
  6. It can be garnished with two or three very thin slices of radishes.
